Our steaks are sourced from Snake River Farms and Double R Ranch in Boise, Idaho. Natural and Hormone Free. All steaks are custom aged a minimum of 28 days. Each steak is hand cut by our chef to our exacting standards. We also feature American Kobe Beef from Snake River Farms. Snake River Kobe Beef far exceeds the quality of all other U.S. Beef brands and has a higher marbling score than U.S.D.A. Prime.
We procure the finest products available (when in season) - Kurobuta Pork, New Zealand Rack of Lamb, Draper Valley Natural Chicken, Fresh Alaskan Halibut, Fresh Wild Chinook Salmon from the most famous NW runs, Fresh Hawaiian Big Eye Ahi Tuna, Maine Lobster, Fresh New England Sea Scallops and Fresh Pacific NW Dungeness Crab, live Puget Sound Oysters, Clams and Mussels.
Whenever possible we source local organic farms for our produce, dairy and cheeses. Each ingredient is carefully chosen to be the finest available.
